How to make mushroom coffee

Mushroom coffee is instant coffee blended with mushroom powders, and you make it like any instant coffee. Stir one 6 g serving into 200 to 250 ml of hot water or milk. Here is the basic method and four ways to drink it: black, latte, iced and in a smoothie.

The basic method

  1. Put one 6 g serving in a mug.
  2. Add a splash of hot water, not boiling, and stir until the powder dissolves.
  3. Top up to 200 to 250 ml with hot water or hot milk.
  4. Taste before adding sugar: Mataye is sweetened with erythritol, with no added sugar.

Tip: dissolving the powder in a little hot water first stops lumps, especially with milk.

Four ways to drink it

Recipe Base Best for
Black 200 to 250 ml hot water Instant coffee drinkers
Latte Half hot water, half hot milk A smooth morning cup
Iced A splash of hot water, then cold milk and ice Summer and afternoons
Smoothie Milk or plant milk, banana, ice A quick breakfast

Black

One serving in 200 to 250 ml of hot water. It tastes like a smooth instant coffee with a light cocoa note.

Latte

Dissolve one serving in about 100 ml of hot water, then add 100 to 150 ml of hot milk. Froth the milk if you can.

Iced

Dissolve one serving in 2 to 3 tablespoons of hot water. Fill a glass with ice, pour in 200 ml of cold milk, then the coffee, and stir. The powder dissolves poorly in cold liquid, which is why you start with hot water.

In a smoothie

Blend one serving with 250 ml of milk or plant milk, a banana and a few ice cubes.

How many cups a day?

One serving of Mataye contains 45 mg of caffeine. For comparison, the NHS estimates about 100 mg of caffeine in a cup of instant coffee. EFSA says intakes up to 400 mg a day, spread through the day, raise no safety concerns for healthy adults, and the NHS advises no more than 200 mg a day in pregnancy. More in mushroom coffee and caffeine. It is not suitable for children.

Mistakes to avoid

  • Waiting for a boil: hot water is enough to dissolve the powder.
  • Adding powder to cold milk: it clumps. Dissolve it in hot water first.
  • Sugaring before tasting: 22.8 kcal per serving of powder, before milk.
  • Leaving the bag open: store it somewhere cool and dry, sealed.
